Editing a parsed grid is safer than editing raw CSV text: the grid keeps quoted fields, embedded delimiters and multi-line cells intact, which hand-editing easily breaks. On save, fields that need quoting are re-quoted automatically (RFC 4180). The UTF-8 BOM option exists because double-clicking a UTF-8 CSV in Excel without it mangles accented characters.
